Naan

Makes 16.

INGREDIENTS

2 tsp Yeast

2 T Sugar

1 cup warmed Water

3 1/2 cups Flour

1 tsp Salt

1/3 cup Milk

1 Egg

1/2 cup Greek Yogurt

2 T softened Butter

Tzatziki

1 cup Greek yogurt

1/2 cucumber

3 cloves of garlic

1/2 block of Feta cheese,

1-2 Tablespoons dried Dill

Gyro night is a family favorite dinner. I used to purchase naan, and honestly there is some really delicious packaged naan that I used.  But that wouldn’t be much of a baking blog, would it? So, of course, I made my own, and it really is better. But don’t take my word for it… try it for yourself!

Make the Naan

Bloom your yeast with the sugar and warmed water. 

Once frothy, add the rest of the ingredients. Using a stand mixer with the dough hook, mix at Speed 2 for 5 minutes. 

Turn out onto a floured surface and dust with flour to keep the dough from sticking. Cut into roughly 3oz to 4oz pieces. Flatten slightly and spray with water. Fold up all the edges to contain the water and roll into a dough ball.

Leave to rest for at least 30 minutes.

(I have been known to skip this step because I didn’t have time. If you are short on time, by the time you get through cutting and rolling the whole batch, your first one has rested an acceptable amount of time to move on.  But it is better if you can leave it to rest.)

Once rested, dust with flour and roll out until pretty thin. (You’ll know it’s thin enough if bubbles form while it’s cooking.)

Rub a griddle pan with butter. Fry the naan until browned and bubbly. Probably a minute per side. 

*This is my husband’s favorite way to help with this dinner. And this is a huge help! By the time I’ve rolled out two more dough balls, the two on the pan are finished and he’s ready for more. Many less burned naan due to my inattention. 

Another hint: You will want to brush off as much of your flour from rolling it out as you can. The flour burns on the griddle pan and starts smoking. Especially when it mixes with the butter. 

Make the Tzatziki

Chop the cucumber and garlic fairly small. You can also use a garlic press if you have one.

Combine all ingredients and stir together to combine.

Finish with salt and pepper and a drizzle of olive oil.

Roast the Potatoes

Preheat your oven to 400. 

Quarter your Yukon Gold potatoes and drizzle with a good coating of olive oil. I use my hands to make sure the potatoes are tossed in the oil and thoroughly coated. Sprinkle with salt, pepper dried basil and rosemary.

I will generally portion 2 potatoes per person, you are the best judge for your family dinners. These potatoes are also great warmed up tomorrow for breakfast, so don’t skimp!
Bake on a parchment lined baking sheet for about an hour, until soft and golden in color. Use the middle rack in your oven.
