…Wamlette?

Makes 4-8.

Ingredients

6 eggs

1/2 cup cottage cheese

1 cup shredded cheese

1 cup browned sausage

3 cloves garlic

Basil

1 T flax seed meal

pinch of salt, pepper

Butter to grease the waffle maker

Avocado for garnish

Wamlette

Combine eggs and cottage cheese. Using an immersion blender, blend until smooth. Add garlic and basil. Blend again until smooth and foamy. Add flax seed meal, salt, pepper and sausage. Stir with spoon. 

Pour into waffle maker, making sure that the sausage and garlic chunks arrange equally. Top with shredded cheese. I used a mix of mozzarella and cheddar.

Cook until done. When cooked fully, the wamlette will easily remove from waffle maker. 

Garnish with avocado and hot sauce.
